How Much Cheese for a Charcuterie Board? Per-Person Chart
A cheese board is the easiest thing to set out at a Christmas party or on New Year's Eve, and the hardest to guess at the store. Here's how many ounces of cheese to plan per guest, a chart for 4 to 50 guests in pounds, how many kinds to buy, and how to keep the board safe while people graze.
The quick answer
- The board is the appetizer before a meal: plan about 2 oz of cheese per person. Wisconsin Cheese and Stella's cheese calculator both use 2 oz for a snack or appetizer board.
- A party where the board is a main snack (a cocktail hour or an evening with other nibbles): plan about 3 oz per person, Stella's cocktail-hour amount.
- The board is the meal (a grazing dinner, a long New Year's Eve night with little else): plan 5 to 6 oz per person. Wisconsin Cheese suggests 5 oz when the board is the whole meal; Stella's chart uses 6 oz for a main meal.
- Cheese is one of many starters before a big holiday dinner: about 1 oz each is enough, the same as our appetizers per person table.
- Kids: count them as about half.
Cheese chart by guests
Pounds are rounded up to the next quarter pound. Many cheese blocks are sold in 8 oz (1/2 lb) packages, so 1 lb is about two blocks. Check the label on wedges, which vary.

How many kinds of cheese
Three to five cheeses is plenty for most boards (the cheesemongers at The Cheese People suggest 3 to 5). Pick for contrast:
- Something aged and firm: aged cheddar, Gouda, Manchego or Parmesan.
- Something soft or creamy: Brie, Camembert, goat cheese or a cheese spread.
- Something different: a blue cheese, an herbed cheese or a smoked one.
Split the total weight across the kinds. For 2 lb with 4 cheeses, buy about 8 oz of each. For small groups (4 to 6 guests), 2 or 3 cheeses keeps you from buying more than you need.
Meat, crackers and the rest of the board
Wisconsin Cheese pairs the cheese with about the same weight of cured meat: 2 oz of meat per person on an appetizer board, 5 oz when the board is the meal. Our appetizers per person guide has the other amounts: 3 to 4 crackers each before dinner, 6 to 8 at an appetizer-only party, and about 1/4 to 1/2 cup of raw veggies.
Put out at least one "vehicle" for the cheese (crackers, sliced baguette or apple slices) and a few extras like grapes, nuts, olives, jam or honey. Label anything with nuts so guests with allergies can steer clear.
Keep the board safe
- Two-hour rule: USDA says not to leave perishable food out of the fridge for more than 2 hours (1 hour above 90°F). That covers soft cheeses, cured meats and cut fruit on the board.
- Take cheese out about 30 minutes before guests arrive so it tastes its best (The Cheese People's tip), and count that time toward the 2 hours.
- Put out half and refill. Set out part of the cheese, keep the rest wrapped in the fridge, and swap in fresh plates instead of topping up a board that has been sitting out.
- Keep it cold if it's a long night: set small dishes of soft cheese over a tray of ice (USDA: keep cold food at 40°F or colder). Our how much ice for a party guide has the amounts.
- Leftovers: wrap and refrigerate anything that went back in the fridge within 2 hours. Toss cheese that sat out longer.
Example: Christmas Eve dinner for 10
Thursday, Dec 24, 2026. A cheese board is the appetizer before ham, with no other starters: 2 oz each = 20 oz, about 1 1/4 lb. Buy 3 cheeses (an aged cheddar, a Brie and a smoked Gouda, about 7 oz each), 1 1/4 lb of salami and prosciutto, two boxes of crackers and a bunch of grapes.
- Dec 23: shop, cube the cheddar and Gouda, wash the grapes. Keep everything in the fridge.
- Dec 24, 5:30 PM: take the cheese out and build the board.
- 6:00 PM: guests arrive. Clear the board by 8:00 PM (2 hours) and refrigerate what's left.
Example: New Year's Eve grazing board for 16
Thursday, Dec 31, 2026, 8 PM to 12:30 AM. The board is the main food, with a few small extras: plan 5 oz each = 80 oz, about 5 lb of cheese across 5 kinds (1 lb each), plus about 5 lb of cured meat.
- Dec 30: shop and slice the firm cheeses. Wrap and refrigerate.
- Dec 31, 7:30 PM: build the first board with about half the cheese.
- 9:30 PM: swap in a fresh board with the other half. The first board goes back in the fridge or gets tossed (it has been out 2 hours).
- Midnight: the toast. Our how much wine per person guide covers the sparkling wine.
