How Many Deviled Eggs Per Person? Party and Dinner Chart
Deviled eggs are the appetizer that disappears before the turkey or ham is even carved. Here's how many halves to plan per guest, a chart for 4 to 50 guests with whole eggs and dozens to buy, how much filling to mix, and how to make them ahead safely for Thanksgiving (Thursday, Nov 26, 2026) or Christmas.
The quick answer
- Before a big dinner (Thanksgiving, Christmas): plan about 2 halves per person (1 whole egg). A full meal is coming, and deviled eggs are one of a few nibbles.
- A party with a mix of appetizers: plan about 3 halves per person (1 1/2 eggs). This is the usual default in party guides.
- Few other appetizers, or a crowd that loves them: plan 4 halves per person (2 eggs).
- Kids: about 1 half each. Some won't touch them, a few will eat four.
One egg makes two halves. Then cook 2 to 4 extra eggs per dozen, because a few whites always tear while peeling.
These numbers fit the appetizers per person rule: 4 to 6 total pieces per guest before dinner, so 2 deviled egg halves leaves room for a cheese board or a dip.
Deviled eggs chart by guests
| Guests | Before dinner (2 halves) | Party (3 halves) | Star appetizer (4 halves) |
|---|---|---|---|
| 4 | 4 eggs | 6 eggs | 8 eggs |
| 6 | 6 eggs | 9 eggs | 12 eggs |
| 8 | 8 eggs | 12 eggs | 16 eggs |
| 10 | 10 eggs | 15 eggs | 20 eggs |
| 12 | 12 eggs | 18 eggs | 24 eggs |
| 16 | 16 eggs | 24 eggs | 32 eggs |
| 20 | 20 eggs | 30 eggs | 40 eggs |
| 24 | 24 eggs | 36 eggs | 48 eggs |
| 30 | 30 eggs | 45 eggs | 60 eggs |
| 40 | 40 eggs | 60 eggs | 80 eggs |
| 50 | 50 eggs | 75 eggs | 100 eggs |
The chart is eggs to serve. Add 2 to 4 per dozen for torn whites and taste tests, then round up to the next full carton. Example: 12 guests before dinner = 12 eggs + 3 extra = 15, so buy 18 eggs (a dozen and a half).
How much filling to mix
The American Egg Board's basic deviled eggs use, for every 3 large eggs: 2 tablespoons mayonnaise, 1/2 teaspoon yellow mustard, 1/2 teaspoon red wine vinegar, and salt and pepper. Scaled up:
| Eggs | Mayonnaise | Yellow mustard | Vinegar |
|---|---|---|---|
| 6 | 1/4 cup | 1 teaspoon | 1 teaspoon |
| 12 | 1/2 cup | 2 teaspoons | 2 teaspoons |
| 18 | 3/4 cup | 1 tablespoon | 1 tablespoon |
| 24 | 1 cup | 4 teaspoons | 4 teaspoons |
Top with paprika, chives, bacon bits or a little hot sauce. Taste the filling before you pipe it and adjust the salt.
How to hard-boil eggs for deviled eggs
The American Egg Board method:
- Put the eggs in a single layer in a pan and cover with cold water by 1 inch.
- Heat just to boiling, then take the pan off the burner and cover it.
- Let large eggs stand in the hot water about 12 minutes (9 for medium, 15 for extra large).
- Drain and cool them in ice water, then refrigerate.
Peeling tip: very fresh eggs are hard to peel. The Egg Board suggests buying them a week to 10 days before you cook them. Peel right after cooling, starting at the large end, under cold running water.
Make them ahead (and keep them safe)
- 1 to 2 days before: hard-boil and refrigerate the eggs. USDA says hard-cooked eggs keep up to 1 week in the fridge.
- The day before: peel, halve and mix the filling. Store the whites and the filling separately, covered, in the fridge. The Egg Board says deviled eggs can be made a day ahead if you fill them just before serving.
- Just before guests arrive: pipe the filling (a zip-top bag with a corner snipped off works) and garnish.
Serving and leftovers:
- Two-hour rule: deviled eggs shouldn't sit out more than 2 hours (1 hour above 90°F), counting prep and serving time. Put out a dozen halves at a time and refill from the fridge, or set the platter over a tray of ice to keep them at 40°F or colder.
- Leftovers: refrigerate promptly and eat within 3 to 4 days (USDA and FDA guidance for cooked egg dishes). Don't freeze them; the whites turn rubbery.
- Allergies: deviled eggs contain egg, and mayonnaise is made with egg too. Some toppings add pork (bacon) or fish (smoked salmon). Label the platter.
Example: Thanksgiving for 12, dinner at 5 PM
Deviled eggs plus a cheese board before dinner = 2 halves each = 12 eggs, plus 3 extra = 15 to cook. Buy 18 eggs.
- Weekend before (Nov 21-22): buy the eggs, so they're a few days old by Tuesday. Pick up mayonnaise, mustard and paprika.
- Tuesday, Nov 24: hard-boil 15 eggs, cool in ice water, refrigerate.
- Wednesday, Nov 25: peel and halve. Mix the yolks with about 1/2 cup mayonnaise, 2 teaspoons mustard and 2 teaspoons vinegar. Refrigerate the whites and filling separately.
- Thursday, 3:30 PM: fill and garnish 24 halves while the turkey roasts. Keep them in the fridge.
- Thursday, 4:00 PM: set out 12 halves as guests arrive and swap in the rest from the fridge. Put any halves that have been out for 2 hours back in the fridge.
