How Much Salad Per Person? Chart for 6 to 50 Guests
Putting a green salad next to the turkey on Thanksgiving, Thursday, Nov 26, 2026, or the ham on Christmas Day, Friday, Dec 25? Salad is cheap, but it's easy to buy three heads of romaine for six people, or one sad bag for twenty. Here's how much lettuce, toppings and dressing to buy for 6 to 50 guests, with yields from the USDA's Food Buying Guide.
The quick answer
- Side salad with a full dinner: plan about 1 cup of salad greens per person, plus about 1/2 cup of toppings (tomatoes, cucumbers, peppers, carrots) and 1 to 2 tablespoons of dressing.
- Lots of other sides (a Thanksgiving table with stuffing, potatoes and casseroles): 1/2 cup of greens per person is enough.
- Salad is the main dish: plan about 1 1/2 cups of greens per person, plus protein.
- Buying: 1 lb of untrimmed romaine makes about 7 3/4 cups of ready-to-eat lettuce. A 2-lb bag of chopped, ready-to-use romaine makes about 21 1/2 cups.
Chef-Menus' food quantity chart plans 1 cup of lettuce per person for a crowd of 50. Its smaller party chart uses 1/2 cup of lettuce and 1/2 cup of raw vegetables per person for small side salads, and says to double the amounts for larger servings or triple them for entrée salads.
Salad chart by guests

|---|---|---|---|---|---|---|---|
| 6 | 6 cups | 1 lb | 3/4 lb | 1 1/4 lb | 3 cups | 3/4 cup | 1 |
| 8 | 8 cups | 1 1/4 lb | 3/4 lb | 1 1/2 lb | 4 cups | 3/4 cup | 1 |
| 10 | 10 cups | 1 1/2 lb | 1 lb | 2 lb | 5 cups | 1 cup | 1 |
| 12 | 12 cups | 1 3/4 lb | 1 1/4 lb | 2 1/4 lb | 6 cups | 1 1/4 cups | 1 |
| 16 | 16 cups | 2 1/4 lb | 1 1/2 lb | 3 lb | 8 cups | 1 1/2 cups | 1 |
| 20 | 20 cups | 2 3/4 lb | 2 lb | 3 3/4 lb | 10 cups | 2 cups | 1 |
| 25 | 25 cups | 3 1/4 lb | 2 1/2 lb | 4 3/4 lb | 12 1/2 cups | 2 1/2 cups | 2 |
| 30 | 30 cups | 4 lb | 3 lb | 5 1/2 lb | 15 cups | 3 cups | 2 |
| 40 | 40 cups | 5 1/4 lb | 3 3/4 lb | 7 1/2 lb | 20 cups | 3 3/4 cups | 2 |
| 50 | 50 cups | 6 1/2 lb | 4 3/4 lb | 9 1/4 lb | 25 cups | 4 3/4 cups | 3 |
For a lighter salad next to lots of sides, cut every column in half. For a main-dish salad, multiply by 1 1/2. A 16-fl-oz bottle of dressing holds 32 tablespoons, enough for about 21 guests at 1 1/2 tablespoons each.
How much lettuce is in a pound?
The USDA Food Buying Guide (used to plan school meals) lists how many ready-to-serve cups you get per pound as purchased:
| Lettuce, as purchased | Ready-to-eat lettuce per pound |
|---|---|
| Romaine, whole heads (untrimmed) | about 7 3/4 cups (1 lb trims to about 0.64 lb) |
| Romaine, chopped, ready-to-use bag | about 10 3/4 cups (21 1/2 cups per 2-lb bag) |
| Iceberg, whole heads (untrimmed) | about 5 1/2 cups shredded (1 lb trims to about 0.76 lb) |
| Green or red leaf lettuce (untrimmed) | about 5 1/2 cups (1 lb trims to about 0.66 lb) |
| Bagged salad mix (iceberg, romaine, carrot, red cabbage) | about 6 1/2 cups |
Whole heads lose about a quarter to a third of their weight to cores and outer leaves, which is why a ready-to-use bag goes further per pound. Heads vary a lot in size, so buy by weight: weigh them in the produce scale, or check the net weight on the bag.
Spring mix and baby greens aren't in the USDA table. For those, use the "servings per container" on the label as your guide and plan about 1 label serving per guest.
Toppings and dressing
- Raw vegetables: about 1/2 cup per person all together (tomatoes, cucumbers, peppers, carrots, radishes). For 10 guests that's about 5 cups, for 25 about 12 cups (Chef-Menus).
- Dressing: 1 to 2 tablespoons per person. Chef-Menus plans 1 1/2 cups of dressing for 10 guests and about 4 cups for 25. For a self-serve dressing bottle at a big buffet, it plans about 1 tablespoon per person, or 1 quart for 50.
- Offer two dressings (one creamy, one vinaigrette) and split the total between them rather than buying the full amount of each.
Make it ahead without wilting
- Wash whole heads; skip washing ready-to-eat bags. Clemson Extension says greens in a sealed bag or container labeled "washed", "triple washed" or "ready-to-eat" don't need washing again unless the label says so; re-washing won't make them safer and adds a chance of cross-contamination. Whole heads and unlabeled greens should be washed.
- Dry the leaves well. Drain them in a colander, then use a clean salad spinner or wipe them with a clean towel or paper towel.
- Keep it cold. Refrigerate greens right away, away from raw turkey, ham or their juices.
- Dress at the last minute, or put the dressing on the side so leftovers keep.
- Two-hour rule: like other perishable food, put the salad back in the fridge within 2 hours (1 hour above 90°F), per USDA.
Example: Thanksgiving for 12
Thursday, Nov 26, 2026. Turkey plus several sides. You could go as light as 1/2 cup each, but plan 1 cup so seconds are covered.
- Greens: 12 cups, about 1 3/4 lb of whole romaine heads, or about 1 1/4 lb of bagged chopped romaine.
- Toppings: 6 cups of chopped tomatoes, cucumbers, peppers and carrots.
- Dressing: about 1 1/4 cups; one 16-oz bottle covers it.
Example: Christmas dinner for 8
Friday, Dec 25, 2026. Ham, potatoes, green beans, rolls and a salad.
- Greens: 8 cups, about 3/4 lb of bagged chopped romaine, or 1 1/4 lb of whole heads.
- Toppings: 4 cups.
- Dressing: about 3/4 cup, so one bottle with plenty left over.
