How Much Green Bean Casserole Per Person? Chart for Crowds
Green bean casserole is on almost every Thanksgiving table and at almost every Friendsgiving potluck, and it's easy to make too little for a crowd or three pans for eight people. Here's how much to plan per guest, a chart for 4 to 40 guests with how many batches and how much of each ingredient to buy, and how to time it for Thursday, Nov 26, 2026.
The quick answer
Plan about 2/3 cup of green bean casserole per person when it's one of 3 or 4 sides. The classic Campbell's recipe (one 10.5 oz can of cream of mushroom soup and 4 cups of cooked green beans in a 1 1/2-quart dish) makes 6 servings, so one batch feeds about 6 guests.
At a potluck or a big buffet with 6 or more sides, most people take a smaller scoop. Plan about 1/2 cup per person, so one batch stretches to about 8 guests.
In raw beans, that's about 1/4 lb of fresh green beans per person: Campbell's says 4 cups of cooked beans is about 1 1/2 lb fresh.
What's in one classic batch
The original Campbell's recipe (serves 6, 1 1/2-quart casserole):
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup milk
- 1 teaspoon soy sauce and a dash of black pepper
- 4 cups cooked cut green beans: about 1 1/2 lb fresh (blanched), 16 to 20 oz frozen (thawed), or 2 cans (14.5 oz each), drained
- 1 1/3 cups French fried onions (about one 2.8 oz can), 2/3 cup stirred in and 2/3 cup on top
A doubled batch fills a 9x13 pan (about 3 quarts) and serves about 12.
Green bean casserole chart by guests
| Guests | Batches (serves 6) | Fresh green beans | Soup (10.5 oz cans) | Fried onions (2.8 oz cans) | Potluck batches (serves 8) |
|---|---|---|---|---|---|
| 4 | 1 | 1 1/2 lb | 1 | 1 | 1 |
| 6 | 1 | 1 1/2 lb | 1 | 1 | 1 |
| 8 | 2 | 3 lb | 2 | 2 | 1 |
| 10 | 2 | 3 lb | 2 | 2 | 2 |
| 12 | 2 (one 9x13) | 3 lb | 2 | 2 | 2 |
| 16 | 3 | 4 1/2 lb | 3 | 3 | 2 |
| 20 | 4 (two 9x13) | 6 lb | 4 | 4 | 3 |
| 24 | 4 (two 9x13) | 6 lb | 4 | 4 | 3 |
| 30 | 5 | 7 1/2 lb | 5 | 5 | 4 |
| 40 | 7 | 10 1/2 lb | 7 | 7 | 5 |
Batches are rounded up. For canned beans, buy 2 cans (14.5 oz) per batch; for frozen, about 16 to 20 oz per batch. Fried onions also come in bigger containers: a 6 oz container is a little more than two 2.8 oz cans, so it covers about 2 batches. Use the potluck column only if there are plenty of other sides on the table.
How long to bake it
Campbell's bakes it at 350°F for 25 minutes until hot and bubbling, then stirs, adds the rest of the onions and bakes 5 minutes more until they're golden. A doubled batch in a 9x13 pan, or a casserole straight from the fridge, takes longer. Go by the center, not the clock: USDA lists 165°F as the safe temperature for casseroles, so check the middle with a food thermometer.
Oven tip: the turkey rests 30 to 40 minutes before carving, which is the usual window for the casserole, the dinner rolls and the sweet potato casserole.
Make it ahead
- The day before: mix the beans, soup, milk, soy sauce and the first 2/3 cup of onions in the baking dish, cover and refrigerate.
- Keep the topping separate. Add the remaining onions only for the last 5 minutes so they stay crunchy.
- From the fridge: let the dish sit out while the oven heats, then bake until the center reaches 165°F. Expect it to need more than 25 minutes.
Bringing it to a potluck
- Keep it hot. USDA says hot food should stay at 140°F or warmer. Wrap the dish in foil and towels for the drive, or reheat it at the host's house.
- Two-hour rule: don't leave it out more than 2 hours (1 hour above 90°F). After that, refrigerate it or throw it away.
- Bring the topping in its can and add it at the host's oven so it doesn't go soggy in the car.
- Label it. The classic recipe has milk, soy (soy sauce) and wheat (in the fried onions). Check your labels, and tell guests what's in it.
Leftovers
Refrigerate leftovers within 2 hours in shallow containers. USDA says leftovers keep 3 to 4 days in the fridge or 3 to 4 months in the freezer (the onions will soften). Reheat covered until it reaches 165°F.
Example: Friendsgiving potluck for 20
You signed up for green beans, and there will be 6 other sides, so use the potluck column: 3 batches, or one 9x13 pan (a double batch) plus one 1 1/2-quart dish.
- Shopping: 4 1/2 lb fresh green beans (or 6 cans of 14.5 oz), 3 cans of cream of mushroom soup, 1 1/2 cups milk, soy sauce, and 3 cans (2.8 oz) of fried onions (or one 6 oz plus one 2.8 oz).
- Night before: blanch the beans for 2 to 4 minutes, cool them in ice water, mix everything except the topping onions, cover and refrigerate.
- Before you leave: bake at 350°F until the center reaches 165°F, then wrap it hot. Add the topping in the host's oven for 5 minutes.

FAQ
How many people does one 9x13 green bean casserole feed? About 12 as one of several sides, or up to about 16 at a potluck with lots of other dishes.
How much green bean casserole for 50 people? About 9 batches at 2/3 cup each, or about 7 at a potluck (1/2 cup each). That's 4 to 5 9x13 pans and roughly 10 1/2 to 13 1/2 lb of fresh green beans.
Fresh, frozen or canned beans? All three work. Canned is the cheapest and fastest, frozen is the easiest middle ground, and fresh beans (blanched first) stay the greenest and firmest.
Can I freeze green bean casserole? You can freeze leftovers for 3 to 4 months, but the onions get soft. If you want to make it far ahead, freeze it without the topping and add fresh onions when you bake.
