How Much Coffee for a Crowd? Chart by Guest Count
Coffee with pie is how most Thanksgiving and Christmas dinners end, and it's easy to run short or brew a whole urn nobody drinks. Here's how much ground coffee to use per pot, how many cups a pound makes, what goes in a 30-cup urn, a chart for 6 to 50 guests, how much decaf to make and how much cream and sugar to set out.
The quick answer
- Plan 1 mug of coffee per guest with dessert after a holiday dinner. Coffee Brew Guide's rule of thumb is 1 cup each after dinner, and Chef-Menus' catering chart also uses 1 cup per person. For a coffee-loving crowd or a long evening, plan 1 1/2 to 2.
- Strength: the National Coffee Association's "Golden Ratio" is 1 to 2 tablespoons of ground coffee for every 6 ounces of water. This guide uses 2 level tablespoons (1 classic coffee scoop) per 8-oz mug, the middle of that range.
- A 1-lb bag of ground coffee is about 90 tablespoons (Mr. Coffee's manual: 1 level tablespoon is about 5 g). That makes about 45 eight-ounce mugs at the strength above, or about 90 six-ounce cups at Folgers' milder 1 tablespoon per cup.
- A 30-cup urn takes 1 3/4 to 2 cups of ground coffee (West Bend and Hamilton Beach list 1 3/4 cups; Galaxy lists 2 cups) and pours about 16 mugs.
- Decaf: make about 1 in 4 mugs decaf. Feed The Line's catering guide plans for 20 to 25% of coffee drinkers to want it.
- Cream and sugar: about 1 1/2 tablespoons of half-and-half and 1 1/2 teaspoons of sugar per guest (Chef-Menus' quantity chart).
Coffee chart by guests
One 8-oz mug per guest, 2 level tablespoons of ground coffee per mug. Some water stays in the wet grounds, so brew a mug or two extra.
| Guests | Mugs | Ground coffee | Water | Regular + decaf mugs | Half-and-half |
|---|---|---|---|---|---|
| 6 | 6 | 12 Tbsp (3/4 cup) | 48 oz (1 1/2 qt) | 4 + 2 | 9 Tbsp (1 half-pint) |
| 8 | 8 | 16 Tbsp (1 cup) | 64 oz (2 qt) | 6 + 2 | 12 Tbsp (1 half-pint) |
| 10 | 10 | 20 Tbsp (1 1/4 cups) | 80 oz (2 1/2 qt) | 7 + 3 | 15 Tbsp (1 half-pint) |
| 12 | 12 | 24 Tbsp (1 1/2 cups) | 96 oz (3 qt) | 9 + 3 | 18 Tbsp (1 pint) |
| 14 | 14 | 28 Tbsp (1 3/4 cups) | 112 oz (3 1/2 qt) | 10 + 4 | 21 Tbsp (1 pint) |
| 16 | 16 | 32 Tbsp (2 cups) | 128 oz (1 gallon) | 12 + 4 | 24 Tbsp (1 pint) |
| 20 | 20 | 40 Tbsp (2 1/2 cups) | 160 oz (1 1/4 gallons) | 15 + 5 | 30 Tbsp (1 pint) |
| 24 | 24 | 48 Tbsp (3 cups) | 192 oz (1 1/2 gallons) | 18 + 6 | 36 Tbsp (1 1/2 pints) |
| 30 | 30 | 60 Tbsp (3 3/4 cups) | 240 oz (1 7/8 gallons) | 22 + 8 | 45 Tbsp (1 quart) |
| 40 | 40 | 80 Tbsp (5 cups) | 320 oz (2 1/2 gallons) | 30 + 10 | 60 Tbsp (1 quart) |
| 50 | 50 | 100 Tbsp (6 1/4 cups) | 400 oz (3 1/8 gallons) | 37 + 13 | 75 Tbsp (2 1/2 pints) |
Coffee-loving crowd, or coffee is the main drink at a dessert party? Double the mugs and the coffee. Like it milder? Use 1 1/2 tablespoons per mug.
How many cups does a pound of coffee make?
It depends on how strong you brew it. Using about 90 level tablespoons in a 1-lb bag:
| Strength | Coffee per serving | From a 1-lb bag | From a 12-oz bag |
|---|---|---|---|
| Mild (Folgers' 1 Tbsp per 6-oz cup) | 1 Tbsp per 6 oz | about 90 six-ounce cups | about 68 six-ounce cups |
| Medium (this guide) | 2 Tbsp per 8-oz mug | about 45 mugs | about 34 mugs |
| Strong (top of the NCA range) | 2 Tbsp per 6 oz | about 45 six-ounce cups, about 34 mugs | about 34 six-ounce cups, about 25 mugs |
Check the net weight on the bag or can: many hold less than a pound (12-oz bags are common). The "makes up to" cup count on a can is figured with 6-oz cups at a mild strength (Folgers' pot directions use 1/2 cup of grounds for 10 cups), so expect fewer mugs.
For a big group, Chef-Menus' catering chart plans 1 1/2 lb of regular ground coffee for 50 one-cup servings, a little stronger than our chart's 100 tablespoons. Buying an extra bag is cheap insurance; unopened bags keep.
Scoops per pot
A classic coffee scoop holds 2 level tablespoons (about 10 g), as Coffee Review notes, but the scoops that come with some coffee makers are smaller. Measure yours with a tablespoon once.
- 12-cup drip coffee maker: the "cups" are 5 oz, not mugs. Mr. Coffee's 12-cup carafe holds 60 oz, which is about 7 mugs. Its manual uses 12 level tablespoons (6 scoops) for a full pot, the mild end; at this guide's strength, use about 15 tablespoons (7 1/2 scoops).
- 6 mugs in a drip maker (48 oz of water): 12 tablespoons, 6 scoops.
- Pour the water by the ounce if your carafe's cup lines confuse you. The NCA and Folgers ratios are per 6 oz of water.
30-cup urn: how much coffee and how many guests
Coffee urns (percolators) count in 5-oz cups too: the Galaxy and Waring urn manuals both define 1 cup as 5 fluid ounces. A full 30-cup urn is 150 oz, but you stop pouring before it's empty: West Bend says to turn the urn off when about 3 cups remain, and Waring says to unplug it when 1 or 2 cups remain. Plan on about 16 mugs from a 30-cup urn.
West Bend's chart (labeled mild strength):
| Fill line | Ground coffee | Mugs poured (about) |
|---|---|---|
| 12 cups | 1 cup | 5 |
| 18 cups | 1 1/4 cups | 9 |
| 24 cups | 1 1/2 cups | 13 |
| 30 cups | 1 3/4 cups | 16 |
| 36 cups | 2 cups | 20 |
| 42 cups | 2 1/2 cups | 24 |
Galaxy's chart uses 2 cups of grounds for 28 to 30 cups, and Waring's medium-brew chart goes up to 3 cups for 30, so add a little more for stronger coffee.
Urn tips from the manuals:
- Use regular or percolator grind, not fine or drip grind. Fine grounds can flood the basket (West Bend, Galaxy).
- Start with cold water and fill to the line for the number of cups you want. Every urn has a minimum (Waring's 30-cup urn won't brew less than 10 cups).
- Allow about 1 minute per cup (West Bend, Hamilton Beach); Galaxy says about 1 1/2 minutes per cup. A full 30-cup urn can take 30 to 45 minutes, so plug it in before you sit down to dinner.
- Take out the basket and stem once it's done. West Bend says leaving them in lets bitter oils drip into the coffee.
- Safety: set the urn on a dry, level surface away from the counter edge, keep the cord from hanging over the edge, and keep kids away from it (West Bend's safety list).
Decaf, cream and sugar
Decaf. Brew a separate, smaller pot of decaf. About 1 in 4 mugs is a good start (Feed The Line plans for 20 to 25% decaf drinkers). After a late Christmas dinner, ask guests: more people may want it. Label the pots so nobody guesses.
Half-and-half. Plan about 1 1/2 tablespoons per guest (Chef-Menus). A half-pint (1 cup, 16 tablespoons) covers about 10 guests and a pint about 20; Chef-Menus' chart uses 2 1/2 pints for 50. Set out a small pitcher and refill it from the fridge: USDA says perishable food shouldn't sit out more than 2 hours.
Sugar. About 1 1/2 teaspoons per guest, or 12 oz of sugar for 50 (Chef-Menus). A small bowl (about 1/3 cup, 16 teaspoons) covers about 10 guests. Add a sweetener option and a few spoons or stir sticks.
