How to Track Server and Bartender Tips and Real Hourly Pay
By Cedar & Ledger
If you wait tables or tend bar, your paycheck is the smallest part of your pay. Most of it comes in as cash and card tips, minus tip-out, and it swings from shift to shift. Here's a simple way to keep track.
1. Log every shift the same night
Write down the date, the shift (AM, PM, double), hours worked, your total sales, cash tips and card tips. Two minutes at the end of the shift beats guessing at the end of the month.
2. Track tip-out separately
Most restaurants tip out bussers, bar and host as a percentage of your sales, not your tips. Log it per shift so "take-home tips" means what actually stayed in your pocket.
3. Work out your real hourly pay
Real hourly pay = (hourly wage x hours + take-home tips) / hours. Check it weekly. In the US, if your wage plus tips falls below the regular minimum wage for a week, your employer generally has to make up the difference (the tip credit rule). Your state may have different rules.
4. Watch your tip percentage
Tips divided by sales shows how you're doing apart from how busy it was. A drop can point to a slow section, a menu change or a pooling change.
5. Find your best shifts
Average take-home tips by weekday and shift type tell you which shifts are worth picking up or swapping for.
6. Report tips every month
In the US, employees who get $20 or more in tips in a month must report them to their employer by the 10th of the next month (IRS Form 4070 or your employer's system). Keep your own log as a record. Rules on how tips are taxed have changed recently, so check current IRS guidance or a tax professional.
7. Set money aside for taxes
Card tips are often taxed through payroll, cash tips may not be. Moving a fixed share of your take-home tips into savings each week avoids a surprise.
