How Much Cranberry Sauce Per Person? Chart, Bags and Cans
Cranberry sauce is the easiest Thanksgiving side to make ahead, but it's also easy to buy too little or far too much. Here's how much to plan per guest, a chart for 4 to 24 guests with how many 12 oz bags of fresh cranberries or 14 oz cans to buy, and when to make it for Thursday, Nov 26, 2026 or Friday, Dec 25, 2026.
The quick answer
Plan about 1/4 cup of cranberry sauce per person, the same amount our turkey per person guide uses for the sides. Make about 1/3 cup per person if your family loves it or you want some for leftover turkey sandwiches. For 12 guests that's 3 cups as a minimum, or 4 cups to be safe.
What makes how much:
- One 12 oz bag of fresh or frozen cranberries cooked with 1 cup sugar and 1 cup water makes about 2 1/4 cups of sauce (Ocean Spray's recipe), enough for about 9 guests at 1/4 cup.
- One 14 oz can (jellied or whole berry) holds about 1 1/2 cups, enough for about 6 guests at 1/4 cup.
Cranberry sauce chart by guests
| Guests | Standard (1/4 cup each) | Bags (12 oz) or cans (14 oz) | Generous (1/3 cup each) | Bags or cans |
|---|---|---|---|---|
| 4 | 1 cup | 1 bag or 1 can | 1 1/3 cups | 1 bag or 1 can |
| 6 | 1 1/2 cups | 1 bag or 1 can | 2 cups | 1 bag or 2 cans |
| 8 | 2 cups | 1 bag or 2 cans | 2 2/3 cups | 2 bags or 2 cans |
| 10 | 2 1/2 cups | 2 bags or 2 cans | 3 1/3 cups | 2 bags or 3 cans |
| 12 | 3 cups | 2 bags or 2 cans | 4 cups | 2 bags or 3 cans |
| 16 | 4 cups | 2 bags or 3 cans | 5 1/3 cups | 3 bags or 4 cans |
| 20 | 5 cups | 3 bags or 4 cans | 6 2/3 cups | 3 bags or 5 cans |
| 24 | 6 cups | 3 bags or 4 cans | 8 cups | 4 bags or 6 cans |
Bag counts assume about 2 1/4 cups of sauce per bag and can counts about 1 1/2 cups per can, rounded up. Store recipes vary, so check yours: some cook the berries with less water and get closer to 1 3/4 cups per bag. When in doubt, buy one extra can. Unopened, it keeps in the pantry for a long time, so it isn't wasted.
How much sugar and water
For each 12 oz bag (about 3 cups of berries), the classic stovetop sauce uses 1 cup sugar and 1 cup water: bring the sugar and water to a boil, add the berries, return to a boil, then boil gently about 10 minutes, stirring now and then. Let it cool at room temperature before you refrigerate it, so it sets.
Doubling for a crowd is easy: 2 bags, 2 cups sugar and 2 cups water in a larger pot. Cranberries are very tart, so taste before you cut the sugar much. Sauces made without sugar or with a sugar substitute won't gel.
Homemade or canned?
Many tables have both: one can of jellied sauce for the people who want the slices with the ridges, and one homemade bowl. If you do both, count them together. For 12 guests, 1 can plus 1 bag of homemade gives about 3 3/4 cups, which covers the generous amount.
When to make it, and how long it keeps
These storage times come from the USDA FoodKeeper:
- Homemade cranberry sauce keeps 7 to 10 days in the fridge (40°F or below). That means you can make it the weekend before, Saturday Nov 21 or Sunday Nov 22, or any day up to Wednesday, Nov 25. For Christmas, make it Dec 19 to 24.
- Opened canned sauce keeps 1 to 2 weeks in the fridge. Move leftovers out of the can into a covered container.
- Unopened cans keep about 2 years in a cool, dry pantry.
- Freezing isn't recommended. FoodKeeper notes that thawed cranberry sauce can turn watery. Raw cranberries freeze well, though, and you can cook them straight from frozen.
- The 2-hour rule: don't leave it out on the table or buffet for more than 2 hours (1 hour above 90°F) before it goes back in the fridge.
Example: 12 guests, dinner at 5 PM
12 × 1/4 cup = 3 cups, and 12 × 1/3 cup = 4 cups. This family puts cranberry sauce on leftover sandwiches, so plan 4 cups:
- Weekend before (Nov 21-22): buy 1 bag of fresh cranberries and 2 cans of jellied sauce (cranberries are on the weekend-before list in our Thanksgiving grocery list).
- Monday or Tuesday: cook the bag with 1 cup sugar and 1 cup water (about 2 1/4 cups), cool it on the counter, then refrigerate it in a covered bowl.
- Thursday, 4:30 PM: slice 1 can of jellied sauce onto a plate and spoon the homemade sauce into a bowl. Keep the second can for leftovers.
- After dinner: put both back in the fridge within 2 hours.

FAQ
Is 1/4 cup per person enough? For most tables, yes. Cranberry sauce is a condiment-sized side, and many guests take a spoonful. Go to 1/3 cup if it's a family favorite.
How many people does one can of cranberry sauce serve? About 6 at 1/4 cup each.
How many people does one bag of cranberries serve? About 9 at 1/4 cup each, once it's cooked into sauce.
Can I make cranberry sauce a week ahead? Yes. Homemade sauce keeps 7 to 10 days in the fridge, so a week ahead works if it was cooled and refrigerated promptly.
