Turkey Thaw Calculator: Thaw Times by Weight (2026)
The most common Thanksgiving mistake is a turkey that's still frozen on Thursday morning. Thawing in the fridge takes days, not hours. Here's the simple math, a table by weight, and a worked example for Thanksgiving on Thursday, Nov 26, 2026.
The rule of thumb
USDA guidance for fridge thawing is about 24 hours for every 4 to 5 pounds of turkey, in a fridge at 40°F or below. Round up, and add a day of cushion, because a big bird can still have ice in the cavity.
Fridge thaw table (Thanksgiving Nov 26, 2026)
| Turkey weight | Days in fridge | Move to fridge by |
|---|---|---|
| 8–12 lb | 2–3 days | Sun Nov 22 – Mon Nov 23 |
| 12–16 lb | 3–4 days | Sat Nov 21 – Sun Nov 22 |
| 16–20 lb | 4–5 days | Fri Nov 20 – Sat Nov 21 |
| 20–24 lb | 5–6 days | Thu Nov 19 – Fri Nov 20 |
A thawed turkey keeps 1–2 days in the fridge, so starting a day early is safe.
Forgot? Cold-water thawing
Keep the turkey in its wrapper, submerge it in cold tap water and change the water every 30 minutes. Allow about 30 minutes per pound, so a 16 lb bird needs about 8 hours. Cook it right away after.
Don't thaw on the counter or in warm water.
Then work backward from dinner
- Pick the time you want to eat.
- Subtract 30 minutes of resting and carving.
- Subtract the roasting time (unstuffed at 325°F, roughly 3¾ to 4¼ hours for 14–18 lb). Always check with a thermometer: 165°F in the thickest part of the thigh and breast.
- Subtract about 30 minutes to preheat and prep.
Worked example: 16 lb turkey, dinner at 3:00 PM
- Move to the fridge: Sunday, Nov 22 (4 days).
- Preheat: about 9:45 AM.
- Turkey in: 10:15 AM.
- Out to rest: about 2:30 PM, carve and serve at 3:00 PM.
Times are estimates; ovens vary, so start checking temperature early.
Fit the sides around the turkey
The oven is busy for 4+ hours, so plan sides for the stovetop, slow cooker, or the 30 minutes while the turkey rests. Our Thanksgiving Cooking Timeline guide and the free Thanksgiving cooking timeline printable lay out the day hour by hour.
Tools that help
If you don't want to do the math, the spreadsheet below takes the turkey weight and your serving time and fills in the thaw date, oven-in time and rest time, then schedules every side and flags oven clashes.
Common questions
Can I cook a turkey from frozen? Yes, it's safe, but it takes about 50% longer.
How do I know it's thawed? The legs move freely and there are no ice crystals in the cavity.
Let a spreadsheet do the math: the Holiday Dinner Cooking Timeline Calculator ($5, Excel + Google Sheets) gives your thaw date, oven-in time and a full dish schedule from turkey weight and dinner time. Or get all three holiday spreadsheets in the Holiday Spreadsheet Bundle ($12, save $3).
Labeling the buffet? The Thanksgiving Food Labels printable ($3) has fold-over dish cards with diet and allergy tick boxes, plus potluck and leftover labels.
